Robert Ogle
Ingredients:

  • 1 green pepper, chopped
  • 2 Tbsp. vegetable oil
  • 3 Lbs. ground beef
  • 2 large onion, chopped
  • 2 tsp. minced garlic 
  • 3 tsp. salt
  • 1/2 tsp. cayenne
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano
  • 1/2 tsp. paprika
  • 1/2 tsp. black pepper
  • 4 Tbsp. chili powder
  • 2 8oz. cans rotel
  • 1 can 15 oz. tomato sauce
  • 4 cans beans of choice
  • 2 cups tomato juice
  • 1 can tomato paste
  • 1 can corn, drained
Directions:
  1. Brown in sauce pan: green pepper, onion, garlic, and meat till no longer pink and vegetables are lucid. 
  2. Drain. In a large pot, add cans of beans and all other ingredients. Mix well. Add meat mixture to pot.
  3. Bring mixture to a boil. Turn down heat and simmer for 1 1/2 hours.

Ingredients
1 lb. ground beef
1 lb. ground lamb
1/2 cup bread crumbs
1 red onion, sliced
1 cup shredded lettuce
1 cup diced tomatoes
1 cup crumbled feta cheese
6 pitas
1 tbsp. onion powder
1 tbsp. oregano
2 tsp. garlic powder
2 tsp. salt
1 tsp. pepper
1 1/2 tsp. cumin
1/4 tsp. nutmeg
2 tsp. lemon juice
Tzatziki sauce (recipe below)

Mix together with hands beef, lamb, all spices, bread crumbs, and lemon juice till well-blended. Then mix well with mixer until sticky and paste like about 5 minutes. Place in 9x13 baking pan that has been foil lined and greased with cooking spray. Wet hands and put meat mixture into loaf shape and place in pan. Bake at 350 degrees for 55 minutes. Pour off grease and slice thin on a plate. When building the pita, garnish with Tzatziki sauce, lettuce, tomatoes, feta cheese, and onions that have been lightly sauteed in olive oil. Serve with Tzatziki sauce.

Tzatziki Sauce
Ingredients
3 tbsp. olive oil
1 tbsp. vinegar
2 cloves minced garlic
1/2 tsp. salt
1/4 tsp. white pepper
1 cup greek yogurt
1 cup sour cream
1 cucumber, peeled, seeded, and diced
1 tsp. dill

Combine oil, vinegar, garlic, salt, and pepper in bowl. Mix well. With a whisk combine yogurt and sour cream. Add oil mix to yogurt mix. Combine well. Blend in dill and cucumber, Chill for two hours in refrigerator.

Ingredients:
  • 1 pkg. spaghetti
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 lb. ground beef
  • 1 jar olives, chopped
  • 1 can tomatoes
  • 1 tbsp. Worcestershire sauce
  • 1/2 tsp. chili powder
  • 1 can tomato paste
  • 1/2 tsp. paprika
  • 1 can cream-style corn
  • 1 tsp. salt
  • 1 can chopped mushrooms
  • 2 c. shredded Italian-blend cheeses
  1. Cook package of spaghetti per directions on package. Drain.
  2. Saute onion and green pepper until clear in a small amount of oil. Add ground beef and fry until brown.
  3. Combine next eight ingredients then add to ground beef mixture. 
  4. Grate the cheese and set side. Place layer of spaghetti in greased baking dish, then layer of meat mixture, layer of chopped mushrooms and layer of cheese. Repeat until all is used. 
  5. Bake 30 to 40 minutes in 350 oven or until hot and cheese is melted.

Ingredients:
  • 1 lb. ground chuck
  • 1 tsp. shortening
  • 1 16oz. can tomatoes
  • 1 8oz. can tomato sauce
  • 2 tsp. salt
  • 2 tsp. sugar
  • 2 garlic cloves
  • 5 oz. package egg noodles
  • 1 cup sour cream
  • 6 green onions, chopped
  • 1 cup grated cheese
  • 3 oz. package cream cheese
  1. Brown beef in shortening;  drain fat. Add tomatoes, sauce, salt, sugar, and garlic. Simmer 5 to 10 minutes.
  2. Cook noodles; drain. Then blend in sour cream, cream cheese, and onion. 
  3. Pour small amount of meat sauce in casserole. Cover with layer of noodles and grated cheese; repeat layers topping with meat sauce. Bake 35 minutes at 350.

Ingredients
  • 1/2 cup chopped onion
  • 1 lb. lean ground beef
  • 1 Tbsp. vegetable oil
  • 8 oz. elbow macaroni
  • 1 16 oz. kidney beans undrained
  • 1 can corn, drained
  • 1 16 oz. tomato sauce
  • 1 cup water
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1 cup cheddar cheese
  • salt and pepper to taste
  • 1 tsp. red pepper
  1. In a large skillet, add onion, ground beef, and vegetable oil. Brown together and do not drain.
  2. Add macaroni, kidney beans, tomato sauce, water, salt and pepper, and red pepper. 
  3. Simmer for 15 minutes or until macaroni is done. Add cheese, cover and heat till melted.

Ingredients
  • 4 large potatoes, peeled and boiled
  • 4 tsp. salt
  • 4 eggs beaten
  • Dried bread crumbs
  • 1 lb. cuban seasoned ground beef (recipe below)
  • flour (enough to roll in)
  • oil for frying
  1. Boil potatoes until cooked. Drain. Mash with salt. Do not add butter or liquid. Let cool.
  2. Take a handful of mashed potatoes. Split in half and make each half into a bowl shape while pressing inward with fingers.
  3. Stuff the indention's with spiced ground beef.
  4. Bring 2 halves together and smooth to make a round ball about the size of a golf ball. Dip ball in egg and flour lightly cover. Dip egg again then the bread crumbs. Important: Refrigerate for 2 hours before next step.
  5. Use frying pan with oil to cover half ball. Heat oil to 375. Put balls in oil. Cook 2 minutes until brown. Flip and cook the same way. Can use deep fryer for 2 minutes.
Cuban Seasoned Ground Beef
Ingredients
  • 1/2 cup finely chopped onion
  • 1 large green bell pepper finely chopped
  • 3 cloves garlic minced
  • 1 lb. ground beef
  • 1 tsp. salt
  • 2 tsp. cumin
  • 1 tbsp. black pepper
  • 4 tsp. tomato paste
  • 1 tbsp. vinegar
  1. Saute onions and peppers till limp. Add garlic, beef, salt, cumin, pepper, paste, and vinegar.
  2. Continue till beef is cooked. Drain and cool.

Ingredients
  • 1/2 gal. tomato juice
  • 1/4 tsp. basil leaves
  • 1/4 tsp. garlic powder
  • 1/4 tsp. parsley flakes
  • 2 cans tomato paste
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. oregano
  • 1/4 tsp. rosemary
  • 1 lb. ground pork
  • 2 lbs. ground beef
  • 1/4 cups Parmesan cheese
  • 2 eggs
  • 1/2 cup milk or cream
  • 1/4 tsp. garlic powder
  • 1 cup toasted bread crumbs
  • 1 medium-sized onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  1. Combine in large heavy cooker tomato juice, basil, garlic powder, parsley, tomato paste, salt, sugar, oregano, and rosemary. Bring to a boil and simmer 3-4 hours.
  2. Combine pork, beef, Parmesan, bread crumbs, onion, eggs, milk, and garlic powder. Then add salt and pepper.
  3.  Mix thoroughly. Form into balls. Brown in skillet. Drop into simmering sauce last hour. 
  4. Serve over hot spaghetti.

Ingredients:

  • 1 sliced medium onion
  • 2 Tbsp. butter or margarine
  • 1 lb. ground beef
  • 1 slightly beaten egg
  • salt and pepper to taste
  • 1 jar rich mushroom gravy
  • 2 Tbsp. ketchup
  • 1 tsp. soy sauce

  1. In a large skillet, cook onion in melted butter until tender. Remove onion from skillet.
  2. In a medium bowl, combine ground beef and egg; mix well.
  3. Form meat mixture into 4 to 6 oval patties until browned on both sides; season with salt and pepper.
  4. Stir in gravy, ketchup, and soy sauce; return onions to skillet. 
  5. Cover and simmer 10 minutes or until patties are done.

Ingredients
  • 2 lbs. ground beef
  • 1 egg
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 3/4 cup Ketchup
  • 2 Tbsp. Worcestershire sauce
  • 1 onion
  • 3/4 cup bread crumbs or saltine crackers
  1. Preheat oven 375.
  2. Mix all ingredients together. Place in loaf pan.
  3. Bake 40 min. Drain grease. Cook at 325 for 30 min.

Ingredients
  • 1/2 to 1 lb. ground beef
  • 1 onion
  • 1/2 tsp. salt
  • 1 box Kraft macaroni and cheese
  • 1 tbsp. margarine
  • 1/2 cup ketchup
  • 1 bell pepper chopped
  1. Combine beef,onion,pepper, and salt.
  2. Cook box of macaroni and cheese.
  3. Stir in cheese and margarine. Add ketchup and melt.

Ingredients
  • 1 lb. ground beef
  • 1 onion chopped
  • 1 cup small cured cottage cheese
  • 1 10 oz. diced tomatoes and green chilies
  • 1 8 oz. tomato sauce
  • 6 10 in. flour tortillas
  • 8 oz shredded cheddar cheese
  • 2 tbsp. tomatoes chopped
  • 1 can Enchilada Sauce

  1. Heat oven to 350.
  2. Cook beef and onion together-drain.
  3. Mix in cottage cheese.
  4. Take diced tomatoes and chillies, sauce mix together.
  5. Spoon in tortillas.
  6. Top with chopped tomatoes and cheese.
  7. Roll, put into greased pan.
  8. Sprinkle rest of tomatoes and cheese.
  9. Bake 20 min.

Ingredients
  • 1 pkg. Shells and Cheese Dinner
  • 1 lb. ground beef
  • 1 pkg. taco seasoning mix
  • 3/4 cup water
  • 3/4 cup sour cream
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup salsa
  • 1/2 cup crushed tortilla chips
  1. Preheat oven to 400. Prepare shells and cheese.
  2. Brown meat and drain.
  3. Add taco seasoning and water, simmer 5 min.
  4. Stir sour cream into prepared dinner. Spoon half of dinner into 8 inch square baking dish. Top with meat mixture, half of cheese, and the remaining dinner mixture. Cover.
  5. Bake 15 min.
  6. Top with salsa, remaining cheese, and crushed tortilla chips. Bake uncovered an additional 5 minutes.

Ingredients
  • 1 lb. ground beef
  • 2 1/2 cup water
  • 1/3 cup ketchup
  • 2 tsp. onion powder
  • 1 tsp. mustard
  • 2 cup rotini pasta uncooked
  • 3/4 lb. Velveeta, cut into 1/2 in. chunks


  1. Brown meat in a large skillet.
  2. Drain meat.
  3. Add water, ketchup, onion powder, and mustard.
  4. Bring to a boil and stir in pasta.
  5. Reduce heat to medium low, cover with lid and let simmer 10 min.
  6. Add cheese, stir until melted.

Ingredients
  • 1 lb. hamburger meat in patties
  • 1 tsp. blackening seasoning
  • 4 slices pepper jack cheese slices
  • 4 pieces leafy lettuce
  • 4 onion slices
  • 1 tbsp. creole mayo
  1. Sprinkle both sides of hamburger patties with blackened seasoning.
  2. Grill as desired.
  3. Put pepper jack cheese on burger.
  4. Garnish with creole mayo, lettuce, and onion.
  5. Serve with fries, beans, or fries.
Creole Mayo
Ingredients
  • 1/4 cup mayo
  • 2 Tbsp. Creole seasoning
  • 1/2 lemon juiced
  1. Mix all ingredients in a small mixing bowl and refrigerate.

  • 1 pkg. 24oz. Velveeta Shells and Cheese
  • 2 cans chili no beans
  • 1 pkg. 8.5 oz. cornbread mix, batter prepared as directed on package
  • Preheat oven to 375. Prepare Dinner as directed on package. Stir in chili.
  • Spread into 13 x 9 inch baking dish.
  • Spread prepared cornbread batter on top of chili mixture to within 1/2 in. of edges.
Bake 25 to 30 min or until cornbread is golden brown and fully risen.

Ingredients
  • 1/2 lb. ground beef
  • 1 small onion, chopped
  • 3/4 tsp. garlic salt
  • 1/4 tsp. crushed red pepper
  • 1 jar pasta sauce with mushrooms
  • 2 cups shredded 6 cheese Italian cheese
  • 8 long lasagna noodles cooked and drained.
  1. Brown ground beef and onion in large skillet. Pour off drippings. 
  2. Sprinkle meat mixture with garlic salt and pepper flakes. 
  3. Remove from heat , stir in 1/2 cup pasta sauce and 1 1/2 cups cheese.
  4. Spoon 1 cup pasta sauce into 2 qt. rectangle baking dish. 
  5. Spoon 1/4 cup meat mixture down center of each lasagna noodle, roll up and place seam side down, in baking dish. 
  6. Spoon remaining sauce over roll-ups.
  7. Cover with foil, bake in preheated 375 oven for 35 min. or until heated. 
  8. Remove from oven. 
  9. Sprinkle with cheese and let stand 5 min.
